For me a
country’s fragrance, color and season inspire and infuse my culinary creations.
I have one golden rule: never ask for a recipe. I prefer to savor a dish and
with my palate and knowledge of spices attempt to decipher which ingredients are
paired in order to result in the composition of a dish. This way, whatever
results from my concoctions is truly an original recipe. Whether or not the
recipe is complete or not I guarantee that the end result is tasty.
Cooking is
about trial and error; being creative as long as one has the basic knowledge of
what pairs well with what. Cooking is a result of the stimulation of the
senses…color, texture, consistency, aromas, flavor and transforms into memories
and sensations that are infused with cultural experiences.
I love to
play with food. Every culture has its traditional dishes which are inspired on
local produces and spices. With globalization we now have almost any product
necessary for a recipe so why not mix it up a bit; delve into the melting pot.
What has been defined as “fusion” cooking is nothing more than a culinary
marriage between cultures.
